Who says that a chimichurri sauce is only meant for Summer barbecues? If you’re looking to crank up the flavor of your Fall recipes, this is the sauce you need.
Ever since I tried this vegan sauce recipe, I’ve been finding more ways to incorporate it into my dishes. It can even take steamed vegetables to a whole other level!
You can add it to roasted vegetables, spread it on bread, add it to your favorite vegan sandwich, use it as a tangy dressing for pasta or salads, as a dip for baked potatoes, on buddha bowls, drizzled over pizza, on tacos, etc. The possibilities are endless!
This vegan chimichurri recipe is incredibly easy to make. It only takes 10 minutes and $1.50 for 1.5 cups. I make this recipe with just enough oil to achieve a sauce consistency, but not so much that it feels too oily. A good chimichurri sauce should highlight the herbs, garlic, and vinegar.

1.5 cups parsley leaves. About 1 bunch (tightly packed)
3 cloves of garlic
3 tbsp olive oil
3 tbsp red wine vinegar
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
A squeeze lime juice (approx ¼ lime)
1. Finely chop the parsley leaves.
2. Finely chop the garlic cloves.
3. In a small bowl, combine parsley, garlic, dried oregano (rub it to get the most out of the aroma and flavor), salt, pepper, vinegar, oil, and lime juice.
- Store in an airtight jar for up to 2 weeks.
- Add a sprinkle of chili flakes for a spicy version.
- Avoid using a processor for this recipe. A traditional chimichurri sauce needs to have texture.
